Copalli Barrel Rested is a certified-organic, single-estate rum from the rainforest of southern Belize, pot distilled from fresh sugarcane juice and rested in used American oak bourbon barrels, bottled at 88 proof (44% ABV).
Copalli is made in the Toledo District, the first place in Belize where sugar was produced, at the Copal Tree Distillery, built in 2016 to give local families a living that did not depend on logging. It uses only three ingredients: freshly pressed juice from heirloom organic sugarcane grown on the estate's own farm, pure rainforest canopy water and yeast. The juice is fermented on site, double distilled in a full-bodied pot still, then rested six to eight months in used bourbon barrels. Even the cane fiber fuels the boiler for distillation, and distillation waste fertilizes the fields.
More robust, richer and sweeter than Copalli White, it shows fresh grassy cane with vanilla, oak, leather and a touch of pepper.
The botanical gold label makes it a thoughtful gift for rum lovers.
Aged rum is one of the most diverse spirits in the world, shaped by the sugarcane, the still and the warm climates where it matures, which speed up the interaction between spirit and wood.
Cane-juice rum keeps more of the fresh sugarcane character than molasses rum.
Pot stills give a fuller-bodied spirit.
Serve it neat or on a single large cube.
A twist of orange peel brings out the vanilla.
It makes a rich Rum Old Fashioned with demerara and bitters.
Try it in a Daiquiri for a rounder edge.
It is a thoughtful gift for eco-minded drinkers.
