Copalli Cacao is an organic, single-estate rum from the rainforest of southern Belize, rested with organic cacao nibs and redistilled for deep chocolate character, bottled at 80 proof (40% ABV).
Copalli is made at the Copal Tree Distillery in Belize's Toledo District, a zero-impact distillery powered by biomass energy, and as the largest private employer in southern Belize it supports local livelihoods while setting the standard for rainforest-to-glass production. The cacao comes from Copal Tree Farm itself.
Like all Copalli rums, it uses only three ingredients, freshly pressed juice from locally grown heirloom sugarcane, pure canopy water and non-GMO yeast, with no additives. After fermentation the juice is distilled in a column still to produce a light, clean spirit. The rum is then rested with 100% organic cacao nibs from Copal Tree Farm, which infuse it with deep chocolate character and aromatic complexity, and then redistilled, locking in rich cacao notes while keeping it smooth. It has earned Platinum and Best in Class at the 2023 SIP Awards, 95 points from the IWSC and 93 points from Wine Enthusiast.
A distinctive cacao nose leads to Belizean chocolate and dark berries on the palate, and a long, creamy, balanced cocoa finish.
Enjoy it on the rocks, or use it in premium craft cocktails: a chocolate Old Fashioned, an Espresso Martini twist or a rum Alexander.
Aged rum is one of the most diverse spirits in the world, shaped by the sugarcane, the still and the warm climates where it matures, which speed up the interaction between spirit and wood.
