Copalli White Rum is an organic, single-estate white rum distilled in the rainforest of southern Belize from freshly pressed heirloom sugarcane juice, double distilled in pot and column stills and bottled at 84 proof (42% ABV).
Copalli is made at the Copal Tree Distillery in Belize's Toledo District, the first place in Belize where sugar was produced, at a zero-impact distillery powered by regenerative biomass. It is a product of both craft and conscience, and the estate is the largest non-governmental employer in southern Belize.
It uses just three ingredients: freshly pressed juice from locally grown heirloom sugarcane, pure rainforest canopy water and non-GMO yeast. The cane is harvested at peak ripeness on Copal Tree Farms and fermented within hours, then double distilled in both pot and column stills, capturing the depth of pot distillation and the smoothness of column stills. The rum is rested, not aged, to preserve its pure, fresh character, with no added sugar or artificial ingredients. It has earned Platinum at the 2023 SIP Awards, Gold with 94 points at the 2023 New York International Spirits Competition, Silver at the 2024 San Francisco World Spirits Competition, and was named White Rum of the Year by NYISC in 2019.
Bright aromas of sugarcane juice, pineapple, banana, kiwi and melon lead to a soft, grassy palate with hints of caramel and vanilla.
Clean and vibrant, it is as exceptional in a Daiquiri or a Mojito as it is sipped neat or over ice.
