Copper & Kings uses traditional copper pot distillation to make non-traditional, modern American brandy. The apple brandy is made by alembic distillation, exclusively in copper pots, which gives a rich, textured spirit that keeps the character of the fruit.
What it leaves out matters as much as what goes in: it is non-chill filtered, with no added apple flavors or essences, no added boisé (oak flavoring or infusion) and no caramel color. Everything in the glass comes from the apples, the stills and the barrels.
After distillation the brandy is finished in Kentucky bourbon barrels and new American oak barrels, a dual-barrel approach that layers bourbon-derived sweetness and toasty vanilla beneath the orchard fruit. American oak is rich in lactones, which give warm, buttery, woody, vanilla and coconut flavors, the honeyed warmth and caramel the distillery loves in its brown spirits.
