Dark Arts Straight Rye with Toasted Amburana is a high-rye straight rye whiskey of about seven years, distilled in Indiana and finished, blended and bottled in Kentucky with custom-toasted Amburana oak staves, at 108 proof (54% ABV).
Dark Arts Whiskey House is the brainchild of Macaulay Minton, who previously managed Wilderness Trail's single barrel program. The base whiskey is a 95% rye and 5% malted barley mash, and for the final stage of maturation Dark Arts adds toasted Amburana staves for several weeks. Amburana, sometimes called Brazilian oak, is famous for intense baking-spice and dessert-like flavours. Each small batch yields only around 600 to 750 bottles.
The Amburana brings gingerbread, cinnamon, coconut and vanilla to the bold pepper spice of the rye, giving a strong nose and complex depth.
An adventurous, small-batch rye, it makes a memorable gift.
Sip it neat, then add a few drops of water.
American rye whiskey is made from a mash of at least 51% rye and aged in new charred oak, giving it a spicier, drier character than bourbon, with notes of pepper, herbs and baking spice.
Straight rye whiskey must be made in the United States from a mash of at least 51% rye, aged at least two years in new charred oak and bottled with nothing added but water.
Finishing with staves rather than a full cask lets the blender add a measured amount of a powerful wood like Amburana, which can easily overwhelm a whiskey.
A 95% rye mash bill gives an intensely spicy, herbal base with notes of pepper, dill and mint that stands up well to sweet, aromatic wood.
