Sentinel began when Whiskey Del Bac's customers kept asking what would happen if the Tucson distillery added its Southwest twist to rye and bourbon. Sentinel Bourbon starts with a blend of two- and three-year-old bourbon distilled and initially aged in Ohio, from a mash bill of 60% yellow corn, 35% pumpernickel rye and 5% heritage malt. It is then finished on freshly harvested Del Bac mesquited barrel staves and filtered across mesquite charcoal from the distillery's own malting process, a step it calls the Pima County Process.
The result is a bright but punchy bourbon, with smoked apple pie on the nose. The mesquite smoke plays a supporting role across a light, approachable palate, finishing with long-lasting singed vanilla.
The great horned owl label makes it a distinctive gift for bourbon lovers.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
