Del Maguey Wild Jabalí is a single village mezcal from Santa María Albarradas, Oaxaca, made by Rogelio Martínez Cruz from wild Jabalí agave (Agave convallis) and bottled at 47% ABV.
Jabalí is a notoriously challenging plant to work with. At every step of production after roasting, it foams because of a high quantity of a compound that occurs naturally in the agave, so it takes a highly skilled producer; Rogelio Martínez Cruz is also the maker of Del Maguey's Tobalá, Tepextate and Espadín Especial. The wild magueys take around 18 to 20 years to mature, are roasted in an earthen pit and double distilled in copper. It won Best New Spirit or Cocktail Ingredient at the 2018 Tales of the Cocktail Spirited Awards.
On the nose, Wild Jabalí offers fresh figs, baked apples, star anise and a hint of Parmesan rind. The palate is bright and acidic, with violet florals and tarragon, and the finish carries a faint note of sandalwood.
The bright green bottle with its artist-designed label makes it a collectible gift.
Sip it slowly from a copita.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
