Diplomático No. 3 Pot Still is the third and final release in the Distillery Collection, a limited rum from Venezuela that showcases the heart of Diplomático's taste profile, bottled at 47% ABV.
The copper pot stills were brought to Diplomático's La Miel distillery in 1959; this discontinuous distillation system was originally used in Scotland to make whisky. The pot still rum is made from the best sugar cane honeys and aged in small American white oak barrels until it reaches optimum maturity.
Auburn in the glass, it marries dark spices and ginger with tropical fruit on the nose. Hearty barrel notes never overwhelm the palate, where pineapple, espresso, molasses and baking chocolate sit in remarkable balance.
