Doc Swinson's Alter Ego Triple Cask is a blend of two straight bourbons finished in Pedro Ximénez sherry, Oloroso sherry and Cognac casks, inspired by Scottish and Irish whiskey blending techniques and bottled at 95.8 proof (47.9% ABV).
Doc Swinson's blended two bourbons, one with a high-rye mash bill of 60% corn, 36% rye and 4% malted barley and the other with 75% corn, 21% rye and 4% malted barley, aged five to six years in new charred American oak. The blend is finished in three distinctly different European casks, selected for their age and character, for anywhere from three months to over sixteen months.
The sherry butts come from Montilla-Moriles in Spain, where the sherry solera pyramids date back to the 1920s. Each cask is tasted by the master blender and selected to be married together in ex-Cognac foeders, large oak vats the size of a car, which let the spirits marry and balance before bottling.
The casks layer in chocolate, honey, orange peel, fig, golden raisins and crème brûlée, for a well-balanced, smooth bourbon that makes a fine gift.
Enjoy it neat or with a large ice cube.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
