Don Amado Largo is a mezcal artesanal from Santa Catarina Minas, Oaxaca, made from wild Largo agave, a karwinskii that takes up to 14 years to reach its full, trunk-like form, and bottled at 46% ABV.
Master distiller Germán Arellanes Arellanes makes it at about 4,800 feet. The elongated Largo trunks are harvested at peak maturity and roasted in an earthen pit, and the mezcal is distilled in clay pot stills, the minero tradition of Santa Catarina Minas.
The result is a rich, smoky mezcal with a smooth finish and the mineral, vegetal character of karwinskii.
A single-varietal bottling from one of Oaxaca's most respected palenques, it is a fine gift for mezcal explorers.
Sip it slowly from a copita at room temperature.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
