Don Amado Rústico is a strong Espadín mezcal from Santa Catarina Minas, Oaxaca, made by the most traditional and rustic of the palenque methods and bottled at 94 proof (47% ABV).
Don Amado's mezcaleros handcraft their mezcals from 100% mature highland agave. The agave hearts are roasted in wood-burning earthen pits, and the juices are distilled in traditional Oaxacan ceramic-and-bamboo pot stills, the small clay stills of an ancient method that honours a sixteenth-century production tradition native to Oaxaca and gives Don Amado its distinctive smoky flavour and herbal bouquet.
It has notes of fruit, minerals and clay. The clay-pot still is prevalent on the nose, with aromatics leaning towards ash, crushed walnuts, roasted corn and savoury spice. A bright, citrus Espadín palate is well balanced against caramel, butterscotch and fresh herbs.
The most traditional expression in the Don Amado range, it makes a fine gift for mezcal lovers.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
