Casa Don Lorenzo is a small family distillery that takes its time. The team does no harvesting or fermenting in the hot, rainy summer months, because too much rain lowers the sugar content of the agave and the summer heat is too much for proper fermentation, when yeast can die or react badly.
The distillery prefers copper alembics, the traditional still for tequila, over stainless steel, which can impart a metallic taste. Its tequilas are made from highland agave, fermented with deep well water and double distilled in copper pot stills.
A classic expression of agave, the Blanco delivers a rich and aromatic profile. Floral and citrus notes dominate the aroma, with hints of cooked agave, earth and subtle smokiness, and the palate is rich with cooked agave flavors, making it perfect for both sipping and mixing.
