Don Mateo de la Sierra Alto is a joven mezcal from Pino Bonito, Michoacán, distilled from 100% Agave inaequidens, known locally as Alto, and bottled at 46% ABV.
It is made by maestro mezcalero Emilio Vieyra, from a family that has made mezcal in the Michoacán sierra since the 1800s. The agave is cooked in a conical earthen oven, fermented in wood-lined tanks with spring water and double distilled in stills of copper and wood, then rested in glass for at least six months before bottling.
The nose is ripe with agave, pine and citrus over an herbaceous undertone, and the palate brings brown sugar sweetness, smoked spice, piquant chillies and earthy vegetal notes.
A pure taste of the Michoacán mezcal tradition, it makes a fine gift for mezcal explorers.
Sip it slowly from a copita at room temperature.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
