El Acabo Plata is a small-batch raicilla made from Agave maximiliana by distiller Adán Hernández at the Tres Gallos Taberna in Ahuacatepec, Jalisco, bottled at 84 proof (42% ABV). It has earned a 97-point Platinum rating from the Beverage Testing Institute.
Raicilla is a traditional agave distillate from the rugged sierra and coastal regions of Jalisco, with roots stretching back centuries and an identity distinct from tequila and mezcal in both its agave sources and its regional production culture. El Acabo sources wild and semi-cultivated agave, slow-cooks it before fermentation and double distils in small copper pot stills.
The name El Acabo pays tribute to a festive community celebration held at the end of the agave harvest at the Hacienda de Ahuacatepec. The Plata shows good maximiliana character and is an approachable introduction to raicilla, as at home in cocktails as an alternative to Espadín mezcal as it is sipped neat.
A taste of Jalisco's mountain spirit, it makes a fascinating gift.
Agave maximiliana is one of the main agaves used for raicilla in the mountains of western Jalisco, prized for its bright, fruity character.
Raicilla was long made outside the official tequila and mezcal categories, and only in recent decades has it become widely available beyond Jalisco.
Plata means it is bottled unaged, so the agave's character comes through clearly.
