El Dorado Cask Strength Single Still Enmore is a 12-year-old Demerara rum from Guyana, distilled in 2009 on the Enmore still and bottled at cask strength, 54.3% ABV.
The Enmore still is the original Edward Henry Porter wooden continuous Coffey still, first built at the Enmore Estate in 1880 and moved to Diamond Estate when Enmore closed in 1990. It is the last wooden continuous still operating in the world, and this release is one of a trio of cask-strength single-still bottlings from Demerara Distillers' heritage stills, alongside Versailles and Port Mourant.
The nose brings warm aromatic wood, caramel, honey, vanilla and spice with a sweet-shop quality, along with sawdust, pencil shavings, walnuts and peanut brittle, toasted coconut and black tea. The palate adds dried dark fruit and sandalwood, with tannic bitterness, dark chocolate and coffee grounds.
The classic El Dorado bottle with its vintage label makes it a superb gift for rum collectors.
Add a few drops of water to open the fruit and spice.
Aged rum is one of the most diverse spirits in the world, shaped by the sugarcane, the still and the warm climates where it matures, which speed up the interaction between spirit and wood.
