Capón means the flowering stalk, the quiote, is cut and the agave is left to rest in the field before harvest, so the plant concentrates its sugars. The result is a more robust, flavorful Espadín. The agave is cooked in earth or stone ovens, milled and fermented naturally, and the joven is bottled unaged to keep the purity of the agave rather than barrel influence.
