Entremanos Tequila Blanco High Proof is an additive-free blanco from Hacienda de Oro (NOM 1522) in Amatitán, Jalisco, bottled at 100 proof (50% ABV) in a 700ml bottle.
It is made by Maestro Tequilero Jaime Villalobos Sauza from 100% Blue Weber agave harvested at maturity. The agave is cooked for 12 hours in an autoclave and cooled inside the closed oven for another 36 to 40 hours, milled with a steel roller mill, and fermented spontaneously with deep well water and only ambient yeast in open-air stainless steel tanks before double distillation in stainless pots with copper heads. The high proof edition is a blend of two still-strength production runs, married so the proof settles naturally.
Blending the distinct lots yields a viscous, rich mouthfeel that concentrates flavor without harsh heat. Expect pungent cooked agave, salt, minerality, mint and anise on the nose, then agave, black pepper, earth and citrus on the palate, finishing with cooked agave, starfruit and minerality.
The hand-wrapped label makes it a prized gift for tequila enthusiasts.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
