Fidencio Madrecuixe is a joven mezcal made from 100% wild-harvested madrecuixe agave in Santiago Matatlán, Oaxaca; this bottling is 50.2% ABV.
Fidencio is made by mezcalero Enrique Jiménez at Fábrica de Amigo del Mezcal (NOM-O15X) in Santiago Matatlán, Oaxaca, often called the world capital of mezcal, and draws on four generations of family tradition and skill. Madrecuixe is a tall, slender agave whose piñas look more like a short palm trunk than the typical pineapple shape, and it is harvested wild after 12 to 15 years of growth, giving notably low yields. The piñas are pit-roasted over black oak for five days.
It delivers an explosion of herbal and mineral flavours set against a softly smoky backdrop.
A rare wild-agave mezcal, it makes a fine gift for mezcal explorers.
Sip it slowly from a copita at room temperature.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
Mezcal is made by roasting agave hearts in earthen pits, which gives the spirit its characteristic smoke, then crushing, fermenting and distilling them, often in small copper stills.
Wild agaves are harvested from the hills rather than farmed, so each batch is small and its character reflects the land and season where the plants grew.
A joven mezcal is bottled unaged, letting the full flavour of the agave and the roast come through without the influence of oak.
