Fidencio Tobalá is a joven mezcal made from wild tobalá agave foraged in the mountains near San Baltazar Guelavila, Oaxaca; this bottling is 48% ABV.
Fidencio is made by mezcalero Enrique Jiménez at Fábrica de Amigo del Mezcal (NOM-O15X) in Santiago Matatlán, Oaxaca, often called the world capital of mezcal, and draws on four generations of family tradition and skill. Tobalá is a small wild agave that takes 12 to 15 years to mature and produces only a fraction of the sugar of larger agaves, which is why it is often called the king of mezcals. The agaves are roasted, fermented and distilled in Fidencio's traditional process.
This expression is exceptionally aromatic and flavourful, with notes of tropical fruit, wildflowers, fresh herbs and spice backed by the distinctive flavour of roasted agave. Smoke, mineral and pepper notes linger through the finish.
A rare wild-agave mezcal, it makes a fine gift for mezcal lovers.
Sip it slowly from a copita at room temperature.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
