Firme Jabalí is an artisanal joven mezcal made from 100% maguey jabalí in Oaxaca, bottled at 45% ABV (90 proof).
Firme is run by Ochoa Imports, founded by Alberto Ochoa.
The cooked agave is crushed with a horse-drawn tahona, fermented in open-air wooden vats and distilled in copper pots.
It is bold, with vanilla, buttery and woody aromas and the pear, fruity and earthy notes typical of jabalí agave.
Jabalí is a rare, wild agave known for being difficult to distil, so a jabalí mezcal is a special bottle. Firme's tall, clean bottle with its purple and gold label is a fine find for agave explorers.
