Forbidden Single Barrel is a high-proof Kentucky straight bourbon from master distiller Marianne Eaves, Kentucky's first female master distiller since Prohibition. Drawn from barrel number 56097, it is bottled at 58% ABV, or 116 proof.
Forbidden breaks with bourbon convention: its mash bill uses white corn and white winter wheat, and Eaves ferments at a low temperature, a 'low and slow' approach that develops more esters and fruit in the mash. The result is a soft, creamy, gourmand bourbon, here at full single barrel strength.
Expect vanilla bean and crème brûlée on the nose, with dried fruit, hazelnut, light citrus and layered spice. The palate brings caramel, citrus oil, baking spices and oak sugar, with nutmeg, clove and coffee, and the finish is creamy and sweet, with oak and spice.
