G4 Blanco 108 is a bold, high-proof tequila from Destilería El Pandillo (NOM 1579) in Jesús María, in the Highlands of Jalisco, created by fourth-generation distiller Felipe Camarena and bottled at 108 proof (54% ABV).
It is distilled from 100% estate-grown blue Weber agave cooked in stone ovens and crushed with a traditional tahona. Fermentation uses a 50/50 blend of collected rainwater and natural spring water, and the tequila is twice distilled in copper pot stills.
As the producer notes, 108 is not still strength, which is actually higher and beyond legal limits for tequila. Made in limited quantities, it offers complex aromas, a long finish and perfect texture, with big cooked agave flavour, black pepper, minerals and cinnamon, and subtle pineapple or mint.
An intense showcase of agave from one of the most respected highland distilleries, it makes a fine gift for tequila enthusiasts.
Sip it neat, or use it in a spirit-forward margarita.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
