George Dickel Bourbon Whisky Aged 8 Years is a small-batch Tennessee bourbon from Cascade Hollow Distilling Co. in Tullahoma, aged in charred oak barrels and handcrafted with Dickel's signature chilled charcoal filtration, bottled at 90 proof (45% ABV).
When the Cascade Hollow Distillery opened in 1878 in Coffee County, Tennessee, George Dickel bought a large share. Cascade Hollow has made whisky in the foothills of the Cumberland Plateau ever since, and the 8 Year Old was the first Dickel release ever labeled “Bourbon,” though all of its Tennessee whisky technically meets the criteria.
Perfected by time, experience and true craftsmanship, the bourbon reflects Cascade Hollow's commitment to honestly producing quality whisky. It is aged for 8 years in charred oak barrels and blended to perfection, and the chilled charcoal filtration, a Dickel hallmark, gives the spirit a smoother texture.
Initial notes of sweet vanilla lead into bright hints of cherry and orange, and the bourbon finishes long, with almond toffee and oak. Rich, softly sweet and smooth in the signature Dickel style, with oak presence that gives it backbone.
Best served neat or on the rocks, it is also a natural for an Old Fashioned: muddle a sugar cube with bitters and a splash of water, add the bourbon and ice, and garnish with an orange peel.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
