Glendalough Pot Still is a triple-distilled single pot still Irish whiskey, aged in ex-bourbon barrels and finished in virgin Irish oak casks made from trees grown in the Wicklow Mountains, bottled at 86 proof (43% ABV).
Inspired by its home in the Wicklow Mountains just outside Dublin, Glendalough wanted to capture the flavor of where it comes from. The Irish oaks surrounding the distillery offered the perfect way to do that: the whiskey is finished in 250-liter hogsheads of slow-toasted, sustainably harvested Irish oak. The mash bill follows the pot still tradition, one part malted barley to two parts unmalted Irish barley.
After about three years in ex-bourbon barrels and its Irish oak finish, it shows creamy vanilla, banana custard, spice and herbs, with cinnamon, maple, citrus and charry oak. The palate is smooth and creamy, with a spicy, warm, lingering finish. It has won gold at the San Francisco World Spirits Competition, the New York International Spirits Competition and Meininger's ISW.
It is a distinctive gift for Irish whiskey fans.
Irish pot still whiskey, made from a mash of malted and unmalted barley, is a style unique to Ireland, prized for its creamy texture and spice.
Irish oak is denser and more tannic than American oak, so a short finish adds a lot of spice and structure.
Triple distillation, a hallmark of Irish whiskey, gives a smoother, lighter spirit.
