Hamilton Pimento Dram is an allspice liqueur from rum authority Ed Hamilton's Ministry of Rum Collection, bottled at 30% ABV (60 proof).
Ed Hamilton searched Jamaica for a great pimento dram to export, came up empty, and spent two and a half years developing his own.
It starts with pot still rums distilled from fermented molasses at Worthy Park Estate in Jamaica. Fresh Jamaican pimento (allspice) is ground and macerated in the rum for about a week, then filtered and sweetened with sugar and water.
In the glass it shows clove, star anise and allspice over a funky Jamaican rum backbone, with a pleasant sweetness that lingers on the finish. Its lighter colour makes it especially mixable.
It is an essential ingredient for any tiki bar.

How to Enjoy It
Pimento dram is a classic tiki ingredient: add a quarter ounce to a Mai Tai, a Zombie, a Planter's Punch or a Navy Grog for warm allspice depth. It makes a spiced rum Old Fashioned stirred with aged rum and a dash of bitters, and a festive Lion's Tail with bourbon, lime and simple syrup. A splash brightens hot buttered rum, mulled wine or hot apple cider in winter. On its own, sip it over ice with a twist of orange. Pair tiki drinks with jerk chicken, grilled pineapple and coconut desserts. Because it is strongly spiced, a little goes a long way. Keep the bottle in a cool, dark place after opening.
