HEAVENSAKE Junmai 12 is a light, dry Japanese junmai sake created by HEAVENSAKE with the Konishi Brewery in Hyogo prefecture, presented in a 720ml bottle.
HEAVENSAKE was co-founded by Régis Camus, the award-winning Champagne cellar master, who brings the art of blending from Champagne to sake. Each HEAVENSAKE is made in partnership with a historic Japanese brewery, and Junmai 12 was created with Konishi Brewery in Hyogo.
As a junmai, it is brewed only from rice, water, koji and yeast, with no added distilled alcohol. Junmai 12 is deliberately made at a lower strength than most sake, in line with the move toward lighter, more food-friendly drinks.
Pale and bright in the glass, it is light and dry, with creamy pastry notes, soft rice character and a fresh, clean finish. It has a sake meter value of 2 and acidity of 1.7.
Serve HEAVENSAKE Junmai 12 chilled in a wine glass to enjoy its creamy pastry aromas, or let it warm slightly in the glass to bring out more rice character. It is a natural partner for food: try it with grilled steak, okra and pickled summer vegetables, sushi and sashimi, tempura, roast chicken or soft cheeses. Its light body and gentle acidity also make it a refreshing aperitif. Keep the bottle refrigerated and enjoy it within a few days of opening. The sleek, teardrop-shaped bottle makes it a refined gift for wine lovers who are curious about sake and for anyone planning a special dinner.
