The Wild Rover is a triple-distilled single malt Irish whiskey from High n' Wicked, double-cask matured in ex-bourbon barrels and finished in Pedro Ximénez sherry casks, then bottled at cask strength, 117.4 proof (58.7% ABV).
It was distilled by Darryl McNally at the Royal Oak Distillery in County Carlow, Ireland, from 100% malted barley grown in County Carlow, and triple distilled in copper pot stills. Released in August 2021 as High n' Wicked's Singular Limited Release No. 2, it was a limited production of just 1,000 nine-liter cases, bottled without chill filtration.
High n' Wicked, based in Jackson, Wyoming, releases singular expressions each year that it deems worthy of its name. Here the clean, honeyed triple-distilled malt makes a canvas for the PX finish: dried fruit, chocolate and warm spice, with vanilla, rich oak, black tea and honey on the palate and a long citrus finish.
Cask-strength Irish single malt is uncommon, and this one is a fine gift for whiskey lovers who like sherry casks.
Triple distillation is a hallmark of traditional Irish whiskey, producing a lighter, smoother spirit than the double distillation common in Scotland.
Pedro Ximénez is the richest and sweetest style of sherry, made from sun-dried grapes, and its casks lend dark fruit, raisin and molasses notes.
Cask strength means the whiskey is bottled at the strength it came from the cask, without dilution, so a splash of water lets you find your own ideal strength.
Non-chill-filtered whiskey keeps more of the natural oils and texture from the cask.
