Hillrock Single Malt is an estate single malt whiskey from Hillrock Estate Distillery in New York's Hudson Valley, handcrafted in small batches and bottled at 96.4 proof (48.2% ABV).
It starts with naturally grown Hillrock estate barley, traditionally floor malted on site in the first new malthouse built at a US distillery since Prohibition. The barley is smoked in the malthouse with peat imported from Speyside, Scotland, for about 16 hours, then milled, fermented, distilled in a custom-built 250-gallon copper pot still, aged and bottled on the Hudson Valley estate. Before bottling, the whiskey is finished in select Pedro Ximénez sherry casks. The distillery was set up under the late master distiller Dave Pickerell, formerly of Maker's Mark.
Bright honey amber in the glass, it brings crème brûlée, shortbread, caramelised orange and heather on the nose, opening to a balanced, smooth palate faint with citrus and rounded with toffee, dried fruit, cinnamon and clove. The very long, slightly dry finish carries a delicate lingering smoke.
Field-to-Glass from grain to bottle, it is a fine gift for anyone exploring American single malt.
Enjoy it neat or with a drop of water.
American whiskey covers a wide range of styles, from bourbon and rye to single malts and light whiskeys, and independent blenders and small producers have made it one of the most exciting categories in spirits.
