HKB Hong Kong Baijiu is a modern baijiu bottled at 43% ABV, made from five grains fermented in mud pits in Sichuan, first distilled in China and distilled a second time at a grappa producer in Italy, then rested in ceramic jars for at least two years.
It was created as an entry point to help Western drinkers develop a love for baijiu, and softens the funkier notes typical of the style.
The notes are cherry, pear and papaya, and it mixes well in cocktails.
