Insólito Reposado is an additive-free tequila from a blend of highland and lowland agave, aged six to ten months in new American oak barrels at a distillery 7,200 feet up in the Sierra del Tigre mountains of Jalisco. It is bottled at 80 proof (40% ABV).
Insólito means uncommon. It is made by brothers Octavio and Alberto Herrera at their Premium de Jalisco distillery (NOM 1558) in Mazamitla, the highest distillery in Mexico, where master distiller Alberto Herrera created it. The brand is backed by the American country band Midland.
At that altitude, hot days and cool nights shape a slow fermentation helped by natural spring water. The reposado's months in new American oak round the bright highland and lowland agave with gentle vanilla and wood while keeping it fresh and lively.
Its bold teal bottle, signed by the master distiller, makes it a striking gift.
Reposado, meaning rested, is tequila aged between two months and a year in oak, which gives it a pale gold colour and a gentle touch of wood while keeping the agave bright and lively.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
