IWA 5 is a blended junmai daiginjo sake from Shiraiwa Kura in Toyama, Japan, created by Richard Geoffroy, the former chef de cave of Dom Pérignon, and bottled at 15% ABV.
Like a prestige Champagne, it is an assemblage: Geoffroy blends sakes made from different rice varieties, yeasts and techniques into one harmonious whole.
Each release is numbered as an assemblage, and the blend evolves from one edition to the next.
It shows aromas of melon and pear with white flowers and a hint of violet, faint marzipan and a touch of woodsmoke, and a palate that is rich yet light.
The sleek black bottle carries the IWA name in calligraphy and the number 5, a nod to the five elements of the blend. At 15% it sits at the lighter end for sake, making it a graceful partner at the dinner table and an elegant gift for wine lovers curious about sake.

How to Enjoy It
Serve IWA 5 lightly chilled, around 10 to 12°C, in a white-wine glass rather than a small sake cup so its aromas can open. It is superb with sushi, sashimi, tempura, grilled fish, roast chicken and soft cheeses. Keep the bottle refrigerated after opening and enjoy it within a few days.
