JCB Caviar is a Crémant de Bourgogne Blanc de Blancs from Jean-Charles Boisset, bottled at 12% ABV. It was designed as the ultimate pairing for caviar, balancing briny, citrusy and buttery notes.
It is a blend of 85% Chardonnay and 15% Aligoté, sourced from three areas of Burgundy: the Mâconnais, the Yonne and the Châtillonnais.
Made by the traditional method with a second fermentation in bottle, it ages for a minimum of 18 months on its lees.
In the glass it opens with white blossom, then citrus, before developing pleasant buttery and brioche notes, a vinous, elegant sparkler with a fine mousse.
Its sleek black bottle makes it a stylish gift and a natural for celebrations.

How to Enjoy It
Serve JCB Caviar well chilled, at around 8 to 10°C, in a tulip or white wine glass. Chill the bottle for a few hours in the refrigerator, or for about twenty minutes in an ice bucket filled with ice and water, and open it gently, holding the cork and turning the bottle, so the fine bubbles stay in the glass. As its name suggests, it is made for caviar, served simply with blinis and crème fraîche, and it is equally good with oysters, smoked salmon, sushi, crab and buttery lobster. It is also a lovely aperitif with gougères or salted almonds. Once opened, a sparkling wine stopper will keep it lively in the refrigerator for a day or two.
