Kaiyō The Sheri is a Japanese malt whisky matured in Oloroso sherry, Pedro Ximénez and Mizunara oak casks, then sent on a final sea voyage of up to three months from Osaka. Non-chill-filtered and bottled at 46% ABV, it is released in limited editions of about 450 cases.
Kaiyō, meaning ocean in Japanese, is known for its maritime maturation: the casks travel by sea, where the motion of the ship and changing temperatures deepen the interaction between whisky and wood. The Sheri balances the spicy sandalwood character of Mizunara with the dark-fruit sweetness of sherry.
Expect red plum, prune and fig with honey, cinnamon, toasted hazelnut and orange peel on the nose. The palate is sherried, with plum caramel and candied fruit, cardamom, white pepper and dark-chocolate-covered cherries, and the long finish brings prune, cacao and spice, with sandalwood and incense from the Mizunara.
