Kapena Silver is a 100% Blue Weber agave tequila from the Los Altos highlands of Jalisco, made by a Hawaii-founded brand and bottled at 80 proof (40% ABV).
Kapena, an adopted Hawaiian word for captain, was founded in 2016 by Goto, who worked out a supply of silver tequila from Mexico and built the brand by the bar and bottle in the Islands and on the West Coast. Its motto: tequila, infused with aloha.
The agave grows for eight to ten years in the rich soil and cool nights of the Los Altos highlands, and the distillers keep only the heart of each run, for a mellow, ultra-pure tequila worth building on. The silver is smooth and unaged, with a light, crisp flavor. It won a silver award at the 2019 San Francisco World Spirits Competition.
With its voyaging-canoe label, it makes a fun gift for anyone who loves Hawaii.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
