Kavalan Sherry Oak is a Taiwanese single malt matured exclusively in Spanish Oloroso sherry casks and bottled at 46% ABV. It is a 92-proof version of the rare cask-strength Kavalan Solist Sherry, using the same casks, brought down to strength with Kavalan's spring water.
Kavalan, in Yilan County in north-eastern Taiwan, has become one of the most awarded whisky makers in the world. Taiwan's warm, humid climate accelerates maturation, and the Oloroso casks bring deep fruit and colour to the spirit in a fraction of the time it would take in Scotland.
The nose brings dried apricot with subtle spice, along with raisins, fig and cocoa. On the palate come multiple layers of dried fruit, nuttiness and spice, with marzipan, vanilla, toffee and dark chocolate, sweet and oily, and the finish is elegant and long.
The tall bottle with its deep red label makes it a fine gift for sherried-whisky lovers.

Oloroso is a rich, nutty style of sherry from Jerez, aged oxidatively in the bodega, and the casks that held it give whisky dried fruit, spice and a deep mahogany colour. Kavalan's distillery sits between the mountains and the Pacific, drawing pure spring water from the Snow Mountain range, and its whiskies have collected top honours at international competitions since the distillery opened in 2005.
Taiwan's subtropical heat means each year in the cask counts for far more than in Scotland, with a much larger share evaporating as the angels' share, so the whisky gains depth and intensity at a remarkable pace.
