Peerless High Rye is a barrel-proof Kentucky straight bourbon from Kentucky Peerless Distilling in Louisville, with more than double the rye of the distillery's flagship bourbon. Sweet mashed and bottled without chill filtration, it is bottled at 110.5 proof.
Peerless uses a sweet-mash process, starting each fermentation with a completely fresh yeast culture rather than reusing spent mash as in the more common sour-mash method. Combined with the higher rye content, the result is a bold, spicy bourbon aged around five to six years.
The nose brings oak, warm leather, citrus peel, cedar and dark fruit. On the palate come candied oak, toasted sugar, charred orange, raisin, cocoa and subtle baking spice, and the finish is long and spicy, with rye pepper, leather and nutmeg. A few drops of water bring out its candied citrus and cocoa sweetness.
The distinctive ribbed decanter with its blue and red Peerless label makes it a handsome gift.

Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
