Koch El Mezcal Ensamble is an artisanal mezcal from Río de Ejutla, Oaxaca, made by Maestro Mezcalero Adrián Bautista from Agave angustifolia and Agave karwinskii, bottled at 94 proof (47% ABV).
Koch El Mezcal de Oaxaca was created in 2009 when founder Carlos resumed his family tradition and teamed up with fifth-generation maestro mezcalero Pedro Hernández, with the goal of preserving and promoting mezcal culture. This ensamble is a collaboration from Río de Ejutla, where Adrián Bautista blends Espadín (angustifolia) with the earthier karwinskii using traditional methods.
It opens with bright aromatics of fresh lemongrass and invigorating mint, developing leather notes as it breathes, with a sweet agave funk, dried banana and the green pepper and earthy, rustic edge characteristic of karwinskii; pleasantly balanced at full strength.
The geometric green label makes it a striking gift.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
