La Tierra de Acre Cenizo is a joven mezcal from Valle de Florida in Durango, made by mezcalero Jorge Burciaga from wild-harvested Cenizo agave (Agave durangensis) and bottled at 90 proof (45% ABV).

The wild Cenizo plants are 8 to 14 years old when harvested. They are roasted for five days, then milled by hand with an axe, or hacha, the traditional way. Fermentation takes place in 350-litre tinas with spring water, and the mezcal is distilled in a 350-litre copper still.

It has a medium nose and a complex taste with a light, smooth finish. The flavour brings spicy, peppery notes with an earthy texture and even a slightly lactic aroma.

A true small-producer mezcal, it makes a fine gift for agave explorers.

Sip it neat from a copita.

Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.

Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
