La Tierra de Acre Espadín is an artisanal joven mezcal from Santa Ana del Río, Oaxaca, made by mezcalero Honorato Cruz and bottled at 90 proof (45% ABV).
It is made from Agave angustifolia (Espadín) harvested at 7 to 8 years old. The agave roasts for five days, is milled with a stone tahona, and ferments in 500-liter tinas before distillation in a 250-liter copper still with spring water.
It has a medium nose with floral notes and hints of smoked agave, pineapple and lime. It is slightly spicy in the first sips and light on the finish, with a bit of sweetness from the maturity and slow cooking of the agave.
The clean white label with its agave emblem makes a handsome gift.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
