La Tierra de Acre Tepeztate is a mezcal made from wild Agave marmorata harvested at 25 to 30 years old by mezcalero Honorato Cruz in Santa Ana del Río, Oaxaca. It is bottled at 45% ABV.
Tepeztate is one of the slowest-growing agaves, and the wealth of flavour it absorbs over its long life shows in the glass. The hearts are roasted for five days, crushed with a stone tahona, fermented in 250-litre vats with spring water and distilled in a 250-litre copper still.
It is uniquely complex and eccentric, with floral, herbal and root aromas and a fresh, sweet and citric palate of medium intensity.
The tall bottle with its botanical label is a prized find for agave enthusiasts.
Sip it slowly from a copita.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
