Terrativo Aperitivo Barrel Aged Bitter from Liba Spirits is a first-of-its-kind bourbon-based aperitivo: a high-rye bourbon infused with whole botanicals and aged in oak barrels, made in Tennessee and bottled at 70 proof (35% ABV).
Liba Spirits, co-founded by Colton Weinstein, describes itself as a nomadic distillery, making spirits inspired by and distilled in specific places, and spotlighting local ingredients and terroir. Terrativo, its line of aperitivos and aperitifs, grew out of that idea, and the name nods to the terroir that has always given aperitivos their sense of place.
The team wanted to keep the character of bourbon in the final liqueur while making a spirit that was undeniably aperitivo, with American flavors. They began by distilling a high-rye bourbon, then infused it with tart cherry, fresh and dried orange peel, rhubarb, rhubarb root, hibiscus, cardamom, allspice, gentian, lovage root and cinchona bark, all whole natural ingredients. It is dosed with sugar well below the standard and aged in oak barrels.
Terrativo is not a bitter bomb: expect tart, citrus and spicy notes accentuated by a present but not overbearing bitterness, with a whiskey backbone. It was a finalist for best aperitivo at the 2025 San Francisco World Spirits Competition.
Think of it as a bourbon replacement in cocktails. It makes a tremendous Boulevardier, sips beautifully from a snifter, and shines in a simple highball of one part Terrativo to two parts prosecco.
