DU Aspen Honey Reserve is a bourbon whiskey made by Locke + Co. Distilling in collaboration with the University of Denver, bottled at 88 proof (44% ABV).
It is finished in honey barrels for a soft, golden sweetness.
The collaboration grew from the aspen trees of DU's Kennedy Mountain Campus, and Locke + Co.'s founders are DU alumni.
Expect honey, vanilla and caramel over toasted oak, a fine gift for Pioneers fans and Colorado whiskey lovers.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
