Los Javis Espadín Joven is an artisanal 100% Espadín mezcal from Oaxaca, made by the Mateo family from agave they grow themselves, roasted, crushed by horse-drawn tahona and double distilled in copper pot stills.
The family palenque was established in 1979, and maestro mezcalero Javier Mateo founded the Los Javis brand with his wife in 2003, carrying on a three-generation tradition. It is a fully vertical operation: the family grows its own Espadín (Agave angustifolia Haw) and makes everything at its own palenque. After roasting, the piñas are crushed by tahona, fermented with wild open-air yeasts and double distilled in copper. As a joven, it is bottled young without barrel aging to preserve the purity of the agave.
A perfectly balanced aroma of orange blossom, honeydew and fresh olives leads to a palate with hints of anise, apple and orange oils, complemented by a pronounced saline character and a mild touch of smoke.
The blue agave-print label makes it a striking gift.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
