Mackmyra Björksav, Swedish for birch sap, is a Swedish single malt whisky inspired by the long-awaited return of spring, bottled at 92.2 proof (46.1% ABV) in a 700ml bottle.
Mackmyra included casks seasoned with Swedish birch sap wine to create this whisky, a collaboration with its friends at the artisan winery Grythyttan Vin, which makes its birch wine from local birch sap. It is part of Mackmyra's seasonal series of limited releases.
The birch sap casks give a floral whisky with a fresh spiciness and sweet notes of vanilla fudge, a gentle, springlike single malt with a distinctly Nordic character.
It makes a distinctive gift for single malt explorers.
Mackmyra was founded in 1999 by eight friends who decided, during a ski trip, that Sweden should have its own malt whisky.
Its distillery near Gävle is a 35-meter-tall gravity distillery, with traceability right down to the individual grain fields.
Mackmyra uses local Swedish barley and water, with nearly all of its ingredients sourced within about 75 miles of the distillery.
A drop of water opens the floral notes and brings out the vanilla.
The distillery produces its own smoked malt using peat from a nearby bog, enriched with fresh juniper twigs, a distinctly Swedish touch.
Mackmyra's first limited single malt, Preludium 01, launched in 2006 and sold out in less than 20 minutes.
Birch sap is a traditional spring harvest in Scandinavia, tapped from birch trees as the snow melts.
The seasonal editions let Mackmyra explore Swedish flavors with each release.
