Maestro Dobel Pavito is a pechuga-style silver tequila, made by giving Maestro Dobel Silver a third distillation with fruits, spices and a turkey breast, and bottled at 80 proof (40% ABV).
Pavito begins with a base of Maestro Dobel's Silver tequila, double distilled in copper pot stills for the smoothness Dobel tequilas are known for. After a brief period macerating fruits and spices, a third distillation is performed, a first for the Maestro Dobel portfolio, with the pechuga, a turkey breast, placed at the top of the still. The tequila vapours pass through and are infused with the aromatics of the fruits, spices and savoury turkey, intensifying the tequila and creating layers of complexity.
The result is clear, bright and light-bodied, with slight silvery undertones. Maestro Dobel comes from a family with eleven generations of tequila-making heritage.
Presented in a tall blue bottle in its gift box, Pavito is a rare and festive gift.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
