Mary Dowling Winter Wheat is a wheated Kentucky straight bourbon aged more than four years in wood-fired, toasted and charred new American oak, bottled at 91 proof (45.5% ABV).
The Mary Dowling Whiskey Company was founded by Kaveh Zamanian, founder of Rabbit Hole Distillery, to honor Mary Dowling, one of bourbon's most influential women. Winter Wheat is a tribute to her pioneering spirit and unrelenting passion.
The mash bill is 65% corn, 25% winter wheat and 10% malted barley. The whiskey ages in #3 char barrels that are first wood-fired and toasted, a dual technique that brings a layered sweetness. Wheat in place of rye gives a softer, rounder bourbon, and the toasted barrels add a dessert-forward, fall-like warmth with minimal burn.
Made in Louisville, it is balanced and approachable, and its ribbed bottle with the purple and gold label makes a handsome gift.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
Wheated bourbons swap rye for wheat as the secondary grain, which trades peppery spice for a softer, sweeter, rounder profile.
Toasting a barrel before charring caramelizes the sugars deeper in the wood, adding notes of vanilla, toffee and baking spice.
