Milam & Greene Unabridged Volume 3 is a cask-strength blend of straight bourbon whiskies, launched on 17 September 2024 and bottled at 118 proof (59% ABV), non-chill filtered.
Unabridged refers to a book that has not been edited, a nod to CEO and master blender Heather Greene's book Whiskey Distilled, so the whiskey is offered uncut and unfiltered. Volume 3 blends 49 hand-selected barrels of bourbons aged between three and a half and ten years, sourced from Kentucky, Texas and Tennessee. Volume 1, released in 2022, and Volume 2, released in 2023, were both Double Platinum winners at the ASCOT Awards, and Volume 2 was named among Fred Minnick's Top 25 Whiskeys of 2023. In a blind tasting at the distillery, Volume 3 shone above both.
It pours mahogany, with fragrant caramelised brown sugar, honeysuckle, almond, oak, cigar box and old fine leather on the nose. The palate is smooth yet viscous, with sweet cornbread, crème brûlée, vanilla, peanut brittle and malted milk chocolate, and the finish is smooth with marzipan, baking spice and simple syrup.

Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
