Mizu Sakura Cask is a barrel-finished honkaku shochu from Saga, Japan, single distilled from locally farmed Saga barley and black koji rice and finished in rare yamazakura, wild mountain cherry, casks. It is bottled at 70 proof (35% ABV).
Mizu Shochu is distilled by Munemasa Shuzo in Arita, in Saga Prefecture, and Sakura Cask is the brand's first barrel-finished expression. Its pale gold color is the darkest tint permitted under the designation of honkaku, or authentic, shochu, which must not exceed a set limit on color.
The kiss of cherry wood brings a harmony of spring blossoms, orchard fruit and a touch of smoke over the rich, savory barley base.
Enjoy it neat in a small snifter, mizuwari with a splash of cold water, oyuwari with hot water, or as a highball with soda. It makes an elegant gift.
Honkaku shochu is single distilled, which keeps more of the flavor of its base ingredients than multiple distillation.
Black koji, a mold used to convert starches into sugar, gives a rich, earthy depth.
Yamazakura, or wild mountain cherry, is a rare wood for casks, prized in Japan for its sweet, floral aroma.
Shochu is traditionally enjoyed with food, and its lower strength makes it gentle on the palate.
Kyushu, Japan's southern island, is the heartland of shochu making.
