Mossburn's master blender chose mature whiskies from several Scottish island distilleries that show the typical smoky, phenolic, maritime flavors of traditional peated malt. Aged first in American oak barrels before blending, the whisky was then matured again in Mossburn's signature Cask Bill No. 1: first-fill ex-bourbon barrels fitted with heads of heavily toasted virgin European oak, designed to add smoky spice and depth to the coastal malts.
Smoke and spice lead, with baked citrus and fresh grapefruit sharpness, a savory note of butternut squash and a cool line of salty smoke, ending in a long, smoky finish. The overall effect is like a beach bonfire crossed with a pastry shop.
