Nc'nean Huntress Lemon Meadow is the 2025 release of the distillery's Huntress series and its fourth Huntress bottling, an organic single malt Scotch whisky bottled at 48.5% ABV. The Huntress series explores experimental fermentation and distillation, and this edition is built around a yeast rarely seen in Scotch.
For Lemon Meadow, Nc'nean fermented its organic barley with a yeast from French sparkling wine production, a Champagne yeast that brings out a bright, floral and zesty character.
Distilled in 2019, the spirit matured in STR red wine casks, bourbon casks and oloroso sherry casks and was bottled after more than five years, with 5,729 bottles produced.
On the nose come lemon zest, chamomile tea and warm buttered biscuits, with lime zest, pineapple and white chocolate. The palate is medium-bodied and velvety, with lemon sorbet, creamy malt and floral honey alongside melted white chocolate, vanilla and orange, and the finish has a lively, buzzy bite.
Presented in its illustrated tube, it makes a fine gift for anyone curious about how far a single malt can travel from tradition.
Scotch whisky must be distilled and matured in Scotland for at least three years in oak casks, and any age statement on the label refers to the youngest whisky in the bottle.
